The Alchemy of Onions



Who'a thunk I'd have such fun

With a five pound bag of on-ions

Just slice, add salt and oil, and heat

Until they become soft, and sweet

It's called Onion Marmalade

A perfect dish for a rainy day

You have to stir each 15 minutes

To develop flavor in it

This goes on for hours

Four to be explicit

The more time the onions cook on low,

the more the flavor's in it

I like the slow-food concept

Jammed up and jelly tight

Transforming simple onions to a gourmet's delight

Let roaring thunder sound it's noise

And lightning match it's boast

I'll be cozy in my room

with marmalade and toast
