Collard Greens By All Means


My friend Tracy brought me a huge bunch of fresh-picked collard greens. I didn't have a good vegetarian recipe, so I asked Laura, my FGD and award-winning nutritionist. She quickly gave me this recipe. It is so delicious, you won't miss the ham-hock or all day cooking. Viva veges/ You Go, greens. Here's how it goes:

I carefully removed everything but the leaves, rinsed and drained in a strainer.

In two batches, I steamed them in my vege steamer for about 25 minutes/ until very limp

At this point they were so delicious, they could be enjoyed JUST AS IS

However, I sliced yellow onion about 1/2 cup

Heating a little butter and olive oil in a saute pan, I sauteed the onion until limp, adding a couple of TBS blond balsamic vinegar (opt)

After sauteeing for a few minutes until well softened, I added the drained greens, salt, pepper, half a Meyer lemon, squeezed, and some toasted pecans. OMG!!!!!
